I began my journey in hospitality as a kitchen porter, scrubbing pots and pans and quickly learning that this industry is a true team sport. Since then, I’ve worked as a chef, waiter, bartender, and manager, and one lesson has stayed with me: every great restaurant starts with great people.
Even though my title says CEO, I see my job – and the job of everyone in our Support Centre – as making sure our restaurants and teams have what they need to thrive. Whether you’re serving guests front of house, cooking in the kitchen, or supporting operations behind the scenes, every role is essential to delivering brilliant hospitality and building rewarding careers.
The best ideas don’t come only from head offices; they come from the people closest to the action – in our restaurants and across our support teams. I love hearing what’s working, what could be better, and how together we can make every shift, every project, and every guest experience smoother and more rewarding.
